Antony Cotton’s G&T Cake

Coronation Street and stage actor brings his boozy but delicious Gin and Tonic cake to the Big Brew Up table!

Ingredients:

Syrup:

  • 2 limes (zest and juice of)
  • 100g Sugar
  • 150g tonic
  • 75ml Gin

Icing:

  • 150g icing sugar
  • 5 tablespoons of gin

Sponge:

  • 1 lemon (zest and juice of)
  • 50ml Gin
  • 200g butter
  • 200g sugar
  • 200g self raising flour
  • 3 eggs yolks


Method:

  1. Beat the sugar, butter and zest together until light and fluffy (use an electric whisk, or a lot of handpower). Add in the egg gradually, then add the flour, then the lime juice and gin.
  2. Spoon into a lined baking tin and cook at 180 Celsius for 30-40 minutes.
  3. Mix the icing sugar and gin - use enough gin to make a thick icing paste.
  4. Take all the syrup ingredients and boil them all together, stirring frequently until you have a consistent sauce.
  5. Prick the baked cake multiple times with a cocktail stick and then pour syrup all over, so that the syrup seeps into the cake.
  6. Use a knife to cover the top of the cake with your icing sugar paste.
  7. Leave to cool, then slice and eat!
